Avocado Mango Salsa

1 tablespoon  lime juice — 1 small or 1/2 large
1 tablespoon  + 1 teaspoon olive oil
salt and pepper — to taste
1 ripe mango — peeled & finely diced
3  tablespoons  finely minced red onion
1 jalapeno pepper, seeded — finely minced (optional)
2 tablespoons  fresh cilantro — minced
1 small  ripe avocado — roughly diced

In a medium glass bowl, whisk together lime juice and olive oil.  Add salt and pepper to taste.  Add mango, red onion, jalapeno and cilantro; toss to mix.  Gently fold in avocado.

NOTES : Use spooned on top of grilled or pan sauteed salmon.
