Lemon Mint Tea: Adapted from Delicious Living Magazine
- 5 1⁄2 cups water
- 1⁄2 cup fresh mint leaves, loosely packed
- 1/4 cup Lakanto
- 2 tablespoons fresh lemon juice
In a medium saucepan, bring water and Lakanto to a simmer until Lakanto dissolves. Add mint and simmer for 3 more minutes. Remove from heat and let steep for 6 minutes. Strain, squeezing mint to extract all liquid. Stir in lemon juice. Pour into cups and add one-half slice of lemon to each.
Can serve hot or cold.
