Kale with Coconut Milk and Kefir Lime Leaves

1 clove garlic, minced
2 teaspoons coconut oil
1 bunch kale, chopped into bite sized pieces
1/4 cup light coconut milk
2 kefir lime leaves
1 lime, freshly squeezed

Saute garlic in coconut oil until just starts to give off fragrance but dont let it turn brown. 
Add kale and toss to mix.  Continue to toss until kale starts to soften.
Add coconut milk and kefir lime leaves and continue to cook until kale is soft. 
Squeeze fresh lime over finished dish.

Notes:  Delicious served over cooked quinoa.
